Obtained from the juice of sugar cane. Not refined or centrifuged. Panela is the juice of sugar cane, which undergoes a drying process before going through the purification process, in which the juice is converted into brown sugar. To produce panela, the sugarcane juice is cooked at high temperatures until it forms a fairly dense mixture.
