Lecithin is a complex mixture of phospholipids and triglycerides obtained by washing vegetable oils with water. The most common phospholipids in this mixture are phosphatidylcholine and phosphatidylethanolamine, although the phospholipids inositol, serine, and phosphatidic acid are also important. Phospholipids are the basic cell block, since cell membranes are made of it. Lecithin is best known for its ability to form transport lipoproteins, which enables it to reduce blood cholesterol levels, protecting the body from atherosclerosis. Due to its choline content, an essential compound for the proper functioning of the nervous system, since it is a precursor of acetylcholine.
